Raw Chili

Ingredients

Chili

1 celery stick

5 sun dried tomatoes •

10 cherry tomatoes

 ½ red bell pepper

¼ red onion

Garlic clove

1 teaspoon cinnamon

1-3 chili powder (depends how spicy you like)

Walnut mince meat

80g walnuts

2 tablespoons of soya sauce (or tamari)

1 teaspoon of cumin powder

1 teaspoon of coriander powder

 

Vegetables

½ courgette/zucchini

1 green bell pepper

 Fresh or frozen corn kernels

Cherry tomatoes

Coriander

Method

  1. Blend all the ingredients for sauce with water until smooth. Set aside

  2. Pulse walnuts in a blender into a semi-fine meal (some larger chunks are okay. Be careful not to turn into butter). Transfer walnuts to a medium mixing bowl and mix with remaining ‘meat’ ingredients

  3. Chop all the vegetables and coriander

  4. To assemble pour some chili sauce in a bowl, add chopped veggies, then nut meat and chop coriander
