Thai Brussels Sprouts

I like to experiment in the kitchen, this recipes has been created for a fusion Christmas table - but it's a perfect side dish for all year round. We recommend to serve it e.g. with our sesame crusted tofu

We believe this recipe will help you to fall in love with brussels sprouts and overcome any childhood hatred.

Kaffir lime leaves and green curry paste will add a little Thai flavour to your meal. Brussels sprouts are packed with fiber and vitamin K and add sweetness and earthiness. The nutty crust made from walnuts and almonds is a great replacement for breadcrumbs, so the entire dish resembles French style Gratin.

This Brussels Sprouts Gratin is absolutely dairy free yet still creamy ....and absolutely delicious

Ingredients


300g brussels sprouts ( fresh or frozen)
400 ml coconut milk🥥
1 tablespoon green curry paste (feel free to adjust the amount depending how spicy you like your food)
2 tablespoons soya sauce/tamari
4 kaffir lime leaves
50g walnuts
50g almonds

Method


1.Wash and peel brussels sprouts, cut into halves
2. Preheat the oven to 180C
3. Cut kaffir lime leaves into small pieces
4. Mix coconut milk, kaffir lime leaves, soya sauce and green curry paste into a smooth paste
5. Crush nuts into small pieces - (food processor or chop finely)
6. Pour the coconut mixture over brussels sprouts, sprinkle with crushed nuts
7. Bake in the oven for about 30 minutes until brussels are soft (check with a fork)
